This was my first trip with CDV, but I hope to experience more in the future. From the moment I checked into the hotel, there was not one concern about figuring out transportation, where/what to eat or how to see the best of Bologna and the greater region of Emilia-Romagna. Our host, Daniele, and our guest intern, Maggie, were knowledgeable, thoughtful and thorough in making sure our group of 10 made the most of our trip.
Yes, you do cook with actual Italian nonnas at a home in the hills just outside of Bologna. Make sure to go hungry as there are so many additional nibbles in addition to the meal you are making and you don’t want to miss out. The class at the Michelin star restaurant was a great comparison to see a different approach to how dishes are made. The garden in the back of the property is not to be missed!
Yes, I did end up buying something from each of the stops we had, but once you hear their story and taste the products, you will want to as well, but there was absolutely no pressure. These are not huge commercial distributors so you will not be able to find the same products any where else. The relationships that CDV curated to bring the artisan approach is very apparent. Lambrusco wine, Parmigiano-Reggiano, balsamic tradizionale and prosciutto are all specific to the region and when you taste the real thing you know why it matters.
If considering a cooking tour or even just a way to experience a deeper look into the local culture, do not hesitate to book. You will also want to become one of their repeat customers.
